How we choose

Every shop is evaluated on three dimensions: how well it is recognised by objective third parties, how easy it is to get a seat (Access), and how navigable it is without Japanese (Tourist friendliness). No paid placements, no personal preference, no affiliate weighting. (Some pages contain affiliate links to booking platforms — these have no bearing on scoring.)

Recognition

Recognition is based solely on verifiable third-party awards and selections. The number of awards a shop holds is shown as an Awards pill on each card. Tabelog scores are displayed as a reference signal but are not counted as awards — they reflect crowd consensus, not a judging body.

Access

How easy it is to physically get a seat. We look at whether online reservations are available, whether walk-in queues are realistic on a weekday, and whether the shop stays open late.

Tourist friendliness

How easy it is to navigate the shop without Japanese. We check for English menus, picture menus, visual ticket machines, card payment, and whether the layout suits solo diners or families.

Inclusion criteria

A shop must meet one condition to be considered for the list:

Recognised by at least one objective signal — any entry from the Awards or Other quality signals tables above qualifies. This includes Michelin star, Bib Gourmand, TRY Prize, Ramen Hyakusen, Asia's 50 Best, Tabelog 3.5+, or a major press feature.

Access Score and Tourist Score are descriptive, not gatekeeping. A shop with a two-hour queue and no English makes the list if it has the awards to justify the effort — the scores tell you what you're signing up for.

E-E-A-T measures

  • Every award badge links to its public source (Michelin, Tabelog, award body).
  • All Tourist badges are verified against the shop's official site or confirmed by recent visitor reports on Google Maps / Tabelog.
  • Each entry shows a "Last verified" date. We aim to update entries quarterly, or when a major change is reported.
